Nachos are the perfect after school snack. I love this salsa recipe because I sneak in some veggies and the kids have no idea. It’s full of flavour and super healthy too! The kids love it with my homemade white cheese sauce it just makes this recipe extra yummy.
Any left over salsa can be stored in the fridge for a few days and be used for pizza and pasta.

After School Nachos

Ingredients for Salsa
- 1 tin peeled chopped tomatoes (I used @woolworths brand)
- 1/2 red pepper chopped
- 1 small onion chopped
- 1/4 cup corn
- 1 jalapeno pepper, seeded and chopped
- 1 tablespoon sugar
- Salt to taste
- 1 teaspoon crushed garlic
- 1/2 teaspoon ground cumin
- 1 tablespoon tomato paste
- 1/4 cup white vinegar
- 2 tablespoons lemon juice
*chilli flakes optional
In a large saucepan, combine the first nine ingredients. Stir in the tomato paste, vinegar and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, for 30 mins stirring frequently. Cool to room temperature. Cover and refrigerate until chilled. Serve with chips
Ingredients for Cheese Sauce
1 teaspoon butter
1 teaspoon flour
1/2 cup milk
1/4 cup grated cheddar cheese
Salt to taste
1/4 teaspoon white pepper
Braise butter and flour add milk, salt and white pepper boil till it starts to thicken add cheese and thicken to consistency.
Bake the nacho chips till warmed through add the salsa some chopped chives drizzle white sauce and finish with some parsley leaves and gherkins
