Roast Chicken

Our Eid breakfast isn’t complete without Roast Chicken, and I have the most delicious recipe to share with you.

I have many roast chicken recipes, but this one is the most simple and my favourite.

Marinate it over night, let the oven do the work in the morning, and you will have the most delicious roast chicken to serve for breakfast, lunch or even supper 🍗

Roast Chicken

3x baby chicken butterflied

3x whole cinnamon sticks

4x whole cardamom pods

4x whole black pepper

1/4 cup oil

Salt to taste

1/4 cup lemon juice

2 teaspoon ground coriander

1 teaspoon ground cumin

1/2 teaspoon garam Masala

1 teaspoon turmeric powder

3 teaspoon red chilli powder

2 table spoon fresh crushed ginger

2 tablespoon fresh crushed garlic

4 whole sliced green chillies


Mix all ingredients to make a paste, leaving the spices whole. Make slits into the chicken and rub marinate all over and leave to rest overnight.

Cook in oven @180dc covered with foil. Remove foil 15mins and cook uncovered on grill.
