Comfort Food

This little post of heaven has comfort food written all over it! Growing up khari kitchry was a weekly thing in our home and we really used to look forward to this meal. I love my kitchry rice soft, my potato fry spicy and the khari packed full of flavour. I’m sure many homes have their own recipes and different ways of eating khari kitchry but I am sharing my recipes with you today.

Kitchry Rice

Ingredients

2 tablespoon ghee (clarified butter)

1/2 onion thinly sliced

2 cups basmati rice

1/2 cup oil dhall

1 teaspoon turmeric powder

2 tablespoon whole cumin

2 cinnamon sticks

4 cardamom pods

2-3 cups boiling water

Method

1. Heat ghee in a large pot with whole cumin, cinnamon sticks and cardamom pods.

2. Once ghee melted and heated add onion and braise till light brown in colour

3. Add oil dhall mix with the onion

4. Add 1 cup water and allow dhall to soften for 15mins

5. After 15mins (dhall won’t be completely soft) add in rice with 1 cup water

6. Add salt to taste and turmeric powder

7. Let the rice start cooking with lid half way closed for 20 mins.

8. If water get soaked up after 20 mins and the is rice still hard, add another half cup water and lower heat close lid and let it steam till the rice is soft or till preference.

9. Taste for salt

10. If you feel the rice is still hard or not cooked to preference keep adding the remainder half cup little at a time till you get the rice to the consistency you want.

11. Garnish with fried onions.

Khari

Ingredients

1L yogurt

2 teaspoon crushed garlic

Handful chopped coriander

1 teaspoon coriander powder

1 teaspoon cumin powder

1 teaspoon turmeric powder

1 tablespoon chickpea flour (chana flour)

2 teaspoon crushed green chillies

1 table spoon clarified butter

1/2 tablespoon whole cumin

4 curry leaves

Method

1. Whisk yogurt with, salt, turmeric powder, cumin powder, coriander powder, chickpea flour, green chillies, crushed garlic and crushed garlic

2. In a pot melt clarified butter with whole cumin and curry leaves.

3. When the clarified butter heated throw in the yogurt mixture and whisk till thickened

4. Add chopped coriander and mix

Potato Fry

Ingredients

5 potatoes pealed and thinly sliced round

1 tablespoon mustard seeds

1 tablespoon whole cumin

4 curry leaves

3 tablespoon oil

1 teaspoon cumin powder

2 teaspoon coriander powder

1 tablespoon chilli powder

Handful chopped coriander

Salt to taste

1 teaspoon turmeric powder

Method

1. Heat oil in a frying pan with mustard seeds, whole cumin and curry leaves

2. Add sliced potato and mix with the oil

3. Add in all dry spices and allow to cook with lid on medium heat

4. When potato soft add in chopped coriander and serve
